Well, Labor Day always marks the end of summer here in Alabama. What better way to celebrate the last summer hurrah than this perfect blueberry pie. Not only is it a wonderful dessert to share with all of your friends and family, but it just so happens that the blueberries are perfect this time of year!
I don’t remember the last time I enjoyed pie this much. It is so delicious and fresh with all of the blueberries, and the sour cream adds just the right amount of creaminess. I also noticed that it is not overwhelmingly sweet like a lot of desserts. It is just perfect!
I am sharing some pictures of our Labor Day weekend. I do hope you will enjoy this fabulous little pie and have a great Labor Day celebration!
CREAMY BLUEBERRY PIE
2 sheets pie crust dough (click here for the homemade version)
1 cup sugar
1/4 cup flour
1/4 tsp salt
1/2 cup sour cream
3 cups fresh blueberries
Preheat oven to 350F. Place one pie crust sheet in a pie plate and add fresh blueberries. Combine sugar, salt and flour together. Add the eggs and sour cream and mix until well combined. Pour over the blueberries. Place the remaining pie crust sheet over the top. If not creating a lattice top, then cut about three slits in the top to let steam escape. Moisten the dough with water and sprinkle with sugar. Cover edges of crust with aluminum foil towards the end of cook time if they begin to darken. Bake 50-55 minutes.
