Valentine Jelly Pops

This is a little treat I decided to make for upcoming Valentine’s Day.  It has a layer of strawberry gelatin, a layer of strawberry yogurt and a layer of sweetened condensed milk.  It is a very light and refreshing little sweet treat and I say anything with sweetened condensed milk is going to be heaven!  We need a little heaven on Valentine’s Day.  If you would like to make this treat more of an adult version you can totally do that by substituting half of the water with vodka.  Then you have jelly shots.  Sometimes you need alcohol on Valentine’s Day!  Anyway, I hope you have fun with these, however you decide to make them.  ENJOY my friends!!!

VALENTINE JELLY POPS

Red Layer-

1/2 c boiling water

1  3 oz pkg strawberry gelatin

1/2 c cold water

Pink Layer-

1/2 c cold water

1 1/2 envelope plain gelatin

6 oz strawberry yogurt

White Layer-

1/3 c cold water

1 envelope plain gelatin, less 1/2 tsp plain gelatin

1/3 c sweetened condensed milk

If using a silicone mold spray with nonstick spray then wipe clean (helps with unmolding)

Red Layer-Dissolve gelatin in boiling water.  Add cold water.  Pour 1 tsp into each mold. Refridgerate until firm but not completely set. (30-45 minutes)

Pink Layer-Pour water into a small pan.  Sprinkle with gelatin and let soak for 2 minutes.  Heat over low heat, stirring constantly, until dissolved, about 5 minutes.  Remove from heat and add yogurt.  Allow to cool to room temperature.  Pour 1 tbsp into each mold.  Refridgerate 30-45 minutes.

White Layer-Pour water into pan and sprinkle with gelatin.  Allow to soak for 2 minutes.  Heat over low heat, stirring constantly until dissolved, about 5 minutes.  Stir in the sweetened condensed milk.  Allow to cool to room temperature.  Pour 2 tsp into each mold.

Refridgerate for several hours or overnight.  Garnish each with a popsicle stick.  Makes 15 pops.
