I thought I would share this healthy and wonderfully delicious breakfast with you today. I don’t know about you, but it seems like I eat a lot of fruit and oatmeal for breakfast. Sometimes it’s good to change it up a bit. So, I decided to try a healthier version of breakfast wraps that are usually made with flour tortillas, and use lettuce leaves instead. They turned out very delicious AND this version also cuts out about 100-150 calories! ENJOY!
BREAKFAST LETTUCE WRAPS
1 Tbsp olive oil
1/4 cup chopped red bell pepper
1/4 cup chopped onion
1 cup egg substitute
salt & pepper
1 tsp chopped basil
1 small tomato, chopped
1 oz low-fat feta cheese, crumbled
Butter lettuce leaves
Heat oil in non-stick skillet, and add pepper and onion. Cook over medium heat until onion is translucent. Add egg substitute and spices and cook until eggs are set, stirring occasionally. Place egg mixture on top of wrap and top with tomato and feta cheese. 2 servings of 165 calories each. ENJOY!
