Stuffing Balls

All of us enjoy our holiday leftovers many different ways.  My family usually loves having turkey and onion sandwiches on white bread with mayonnaise, salt and pepper.  I have friends who like to make turkey soup or turkey and dumplings.  There are many ways to change things up with all of the leftover food in the fridge.

The one I am sharing with you today will be made by using your leftover stuffing or dressing and will be great with that turkey soup.  This is extremely easy, which is what you want after spending a lot of time in the kitchen preparing a holiday meal…am I right?

When my mom makes her pan dressing she covers the top with two or three strips of bacon.  So it gave me another idea.  You could also wrap the stuffing balls with a half of a slice of bacon, secure it with a toothpick and serve it as an appetizer snack.  If only I had bacon in the fridge I totally would have made them this way.  Could only be better with a little bacon!

STUFFING BALLS

3-4 cups leftover stuffing or dressing

1-2 eggs

Preheat oven to 350F

Crumble the stuffing or dressing in a large bowl.  The number of eggs you use depends on the amount of dressing that you use.  You want the mixture to be moist enough to form a ball.  Mix with hands until well combined.  Use a large melon baller or ice cream scoop to scoop out balls.  Place on a parchment lined baking sheet.  Bake for 20 minutes.  Serve as an appetizer or with your favorite soup.
